Ingredients
  

For the Muffins:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled diced apples (like Honeycrisp)

For the Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with liners.
  • Mix dry ingredients: In a large bowl, whisk flour, sugars, baking powder, baking soda, cinnamon, and salt.
  • Whisk wet ingredients: In another bowl, whisk eggs, oil, milk, and vanilla.
  • Combine: Add wet to dry ingredients and stir gently. Fold in diced apples.
  • Make crumb topping: Stir flour, brown sugar, cinnamon, and melted butter until crumbly.
  • Assemble muffins: Fill muffin cups 3/4 full. Top each generously with crumb topping.
  • Bake: 18–22 minutes, until a toothpick comes out clean. Cool in pan 5 minutes, then transfer to rack.

Notes

  • You can use Greek yogurt instead of milk for a tangy twist.
  • Add chopped pecans or walnuts to the topping for crunch.
