Apple Fritters

Ingredients
  

For the Fritters:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 2 cups chopped tart apples like Granny Smith
  • Oil for frying vegetable or canola

For the Glaze:

  • 1 1/2 cups powdered sugar
  • 3 –4 tbsp milk
  • 1/2 tsp vanilla extract

Instructions
 

  • Heat oil: Pour oil into a heavy-bottomed pot (about 2 inches deep) and heat to 350°F (175°C).
  • Mix dry ingredients: In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • Mix wet ingredients: In another bowl, beat eggs, milk, melted butter, and vanilla.
  • Combine: Stir wet into dry until just combined. Fold in chopped apples.
  • Fry fritters: Carefully drop large spoonfuls of batter into hot oil, a few at a time. Flatten slightly with spoon. Fry 2–3 minutes per side until deep golden brown.
  • Drain: Transfer to a paper towel-lined rack to cool slightly.
  • Glaze: Whisk glaze ingredients until smooth. Dip each fritter or drizzle generously while still warm.

Notes

  • Don't overcrowd the pan — give fritters room to puff up.
  • Add a little lemon zest for brightness.
  • Make sure oil stays at temp between batches!
