Key Lime Pie Parfaits

Ingredients
  

For the Lime Custard:

  • 1/2 cup key lime juice fresh or bottled
  • 1 can 14 oz sweetened condensed milk
  • 1/2 cup sour cream
  • Zest of 1 lime

For the Crust Layer:

  • 1 1/4 cups graham cracker crumbs
  • 2 tablespoons melted butter
  • Optional: 1/4 cup white chocolate chips melted (for ganache layer)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Extra lime zest for garnish

Instructions
 

  • Make the custard: In a medium bowl, whisk together the key lime juice, condensed milk, sour cream, and lime zest until smooth. Set aside.
  • Prep the crust layer: Mix the graham cracker crumbs and melted butter until evenly moistened. Set aside.
  • Make whipped cream: In a chilled bowl, whip the cream and powdered sugar to soft peaks. Keep cold until ready to use.
  • Assemble the parfaits:
    Spoon a layer of graham cracker crumbs into the bottom of each glass.
    (Optional) Drizzle a bit of melted white chocolate over the crumbs for a rich ganache touch.
    Add a generous spoonful of lime custard.
    Repeat layers as desired, finishing with a dollop of whipped cream and a sprinkle of lime zest.
  • Chill: Refrigerate for at least 1 hour before serving.

Notes

  • No key limes? Regular limes work just fine.
  • Want extra tang? Add a splash of lime juice to the whipped cream.
  • These can be made up to 2 days in advance.
