Pineapple Whip

Ingredients
  

  • 3 cups frozen pineapple chunks
  • 1/2 cup full-fat coconut milk from a can is best
  • 1 tablespoon lime juice fresh is best
  • 1 –2 tablespoons maple syrup or honey optional, to taste

Instructions
 

  • Blend it all: Add frozen pineapple, coconut milk, lime juice, and sweetener (if using) to a high-speed blender or food processor.
  • Whip to perfection: Blend until thick, smooth, and creamy. Scrape down the sides as needed. If it's too thick, add a splash more coconut milk.
  • Serve immediately: Spoon into bowls or swirl into cones for that soft-serve feel. Enjoy right away!

Notes

  • No coconut milk? You can use almond milk, but it won’t be quite as rich.
  • Want it firmer? Freeze for 20 minutes after blending for a scoopable texture.
