frozen pineapple chunks
1/2

full-fat coconut milk
from a can is best

tablespoon
lime juice
fresh is best

–2 tablespoons maple syrup or honey
optional, to taste
Instructions
Blend it all: Add frozen pineapple, coconut milk, lime juice, and sweetener (if using) to a high-speed blender or food processor.
Whip to perfection: Blend until thick, smooth, and creamy. Scrape down the sides as needed. If it's too thick, add a splash more coconut milk.
Serve immediately: Spoon into bowls or swirl into cones for that soft-serve feel. Enjoy right away!
Notes
No coconut milk? You can use almond milk, but it won’t be quite as rich.
Want it firmer? Freeze for 20 minutes after blending for a scoopable texture.
